No. Every dart is saved the moment you tap it. Reopen the app and the Resume card on the Play tab takes you back to exactly where you stopped.
Tap Undo to remove the last dart. To fix something further back, tap the turn in the strip above the keypad and edit it — every score after it recalculates automatically.

No. Once granted, Pro is never revoked because of a missing network connection. It works in a pub basement.
Two ways. Turn on Settings → Data → iCloud backup on both devices, or use Export a backup file on the old phone and Restore on the new one.
Delete the app. Everything goes with it. If iCloud backup was on, turn it off first to remove the synced copy.
